Cucumber Cooler Cocktail

A fresh summery cocktail that will help you use up all of the cucumbers going mad in the garden! I had some gherkins that I had let get far too big and knew I wouldn’t get through them quickly enough. So I juiced them, froze the juice into cubes and used the pulp to make a sort of gherkin relish.

If you’re not a gin fan, vodka or white rum would work fine. If you wanted this as a mocktail, just leave out the gin entirely.


Ingredients

To make one drink

  • 30ml (1 shot) lime juice

  • 1/3 cup cucumber chunks

  • 1 sprig mint

  • 15ml (1/2 shot) simple syrup

  • 30ml (1 shot) gin

  • Cucumber juice ice cube (or regular ice)

  • Soda to top

  • Your preferred garnishes

Method

  1. Muddle the cucumber chunks, simple syrup, mint and lime juice together in a cocktail shaker.

  2. Add the gin and a handful of ice, shake to combine.

  3. Strain into a tumbler over ice (cucumber juice ice cube works really well!).

  4. Top with soda.

  5. Decorate if you would like, or go ahead and enjoy.
